Ingredients
3 cups rolled oats
1 cup pecans, chopped
1/2 cup shredded coconut
1/4 cup honey
1/4 cup melted margarine
1 1/2 teaspoons ground cinnamon
2/3 cup raisins
Directions
Preheat oven to 325°F (163°C). Line a large baking sheet with parchment paper.
In a large mixing bowl, combine the rolled oats, chopped pecans, and shredded coconut.
In a small bowl, whisk together the melted margarine, honey, and ground cinnamon until well blended.
Pour the honey-margarine mixture over the oat mixture and stir thoroughly with a wooden spoon or spatula until all ingredients are evenly coated.
Spread the granola mixture in a single, even layer on the prepared baking sheet.
Bake for 20–25 minutes, stirring every 5–7 minutes to ensure even toasting and prevent burning, until the granola is golden brown and fragrant.
Remove from oven and let cool completely on the baking sheet, about 10 minutes. The granola will continue to crisp as it cools.
Once fully cooled, stir in the raisins to distribute evenly throughout.
Store in an airtight container at room temperature for up to 2 weeks.
