Jack-o'-Lantern Stuffed Peppers

Ingredients
6 large orange bell peppers
1 pound lean ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
2 cups cooked white rice
1 teaspoon dried oregano
1 teaspoon chili powder
3/4 teaspoon salt
1 1/2 cups shredded cheddar cheese, divided
Directions
Heat the oven to 375°F (190°C).
Cut the tops off the peppers and set them aside as lids. Scoop out the seeds and ribs.
With a small paring knife, carve a jack-o-lantern face into one side of each pepper: two triangle eyes, a nose and a jagged mouth. Keep the cuts small so the filling stays in.
Brown the ground beef with the onion in a large skillet over medium-high heat, about 8 minutes, breaking it up as it cooks. Drain any fat. Add the garlic and cook 1 minute more.
Stir in the diced tomatoes with their juice, the rice, oregano, chili powder and salt. Simmer 3 minutes, then take off the heat and stir in 1 cup of the cheddar.
Stand the peppers upright in a baking dish and spoon in the filling. Sprinkle the rest of the cheddar on top and set the lids beside them.
Cover with foil and bake 25 minutes. Uncover, put the lids on and bake 10 minutes more, until the peppers are tender and the cheese is bubbling.
