Ingredients

1 teaspoon olive oil

1 clove garlic, minced

½ yellow onion, diced

1 15-ounce can pinto beans, drained

1 cup chicken broth

1 teaspoon ground cumin

Salt and pepper to taste

Directions

  1. Heat the olive oil in a small saucepan over medium heat. Add the minced garlic and diced onion, stirring frequently, until softened and fragrant, about 1 minute.

  2. Pour in the drained pinto beans and chicken broth. Stir in the ground cumin and season with salt and pepper to taste. Bring to a gentle boil and simmer for 2-3 minutes to allow the flavors to meld.

  3. Transfer the entire mixture, including the liquid, to a food processor or blender. Process until you reach your desired consistency—blend until smooth for a creamy dip, or pulse a few times for a slightly chunky texture.
