1 tablespoon olive oil

1 small onion, chopped

1 cup carrots, thinly sliced

2 cups summer squash, washed and sliced

Salt and pepper to taste

Optional seasonings such as garlic powder, cumin, thyme, basil, or oregano

Directions

  1. Wash your hands thoroughly with soap and warm water before beginning.

  2. Heat the olive oil in a large skillet over medium-high heat for about 1 minute until shimmering.

  3. Add the chopped onion to the hot oil and stir frequently, cooking for 3 to 4 minutes until the onion becomes translucent and lightly golden at the edges.
