Baked Fish 'N' Chips with Honey Vinegar

2 large potatoes, peeled and cut into 1/2-inch thick slices
Salt

1 cup all-purpose flour
1 teaspoon baking powder
1/2 cup low-fat milk
1 large egg
1 1/2 pounds cod fillets
1/4 cup cider vinegar
1 tablespoon honey
4 cups steamed spinach, for serving
Directions
Preheat your oven to 425°F. Line a large baking sheet with foil and lightly coat it with cooking spray.
Arrange the potato slices on the prepared baking sheet in a single layer. Spray them with cooking spray and season generously with salt and ground black pepper. Place in the oven and bake for 25 minutes, or until the edges are golden brown and the potatoes are tender when pierced with a fork.
While the potatoes are baking, prepare the fish batter. In a shallow dish, whisk together the all-purpose flour, baking powder, and 1/2 teaspoon of salt. In a separate bowl, whisk together the milk and egg until well combined. Pour the wet ingredients into the dry ingredients and whisk until smooth.
Dip each cod fillet into the batter, turning to coat all sides evenly. Place the battered fillets on a second foil-lined baking sheet that has been coated with cooking spray.
When the potatoes have about 10 minutes remaining, place the fish in the oven alongside the potatoes. Bake for 8 to 10 minutes, until the coating is golden brown and the fish is opaque and flakes easily with a fork, reaching an internal temperature of 160°F.
While everything is baking, prepare the honey vinegar sauce. In a small bowl, whisk together the cider vinegar and honey until the honey dissolves completely.
Steam the spinach according to package directions until tender. Arrange the cooked potatoes, baked fish, and steamed spinach on serving plates. Drizzle the honey vinegar sauce over the fish or serve it on the side for dipping.
