Ingredients
2 ounces Irish whiskey
1 teaspoon ground espresso
2 teaspoons demerara sugar
2 teaspoons hot water
3 ounces cold brew coffee
as needed Ice cubes
Whipped cream for serving
Directions
In a small bowl, combine the ground espresso and Irish whiskey, stirring well to blend. Allow the mixture to steep for 15 minutes to infuse the whiskey with espresso flavor. Pour the infused whiskey through a fine coffee filter into a cocktail shaker, discarding the spent grounds.
While the espresso steeps, prepare the demerara syrup: In a small bowl, combine the demerara sugar with hot water. Stir until the sugar dissolves completely.
Add the demerara syrup and cold brew coffee to the cocktail shaker containing the filtered espresso-whiskey mixture. Fill the shaker with ice cubes and secure the lid.
Shake vigorously for about 30 seconds until the outside of the shaker becomes frosty and cold, indicating the drink is well-chilled and blended.
Pour the chilled cocktail into a Collins glass filled with fresh ice cubes. Top generously with whipped cream and serve immediately.
