Ingredients

1½ cups Sour yogurt

2 tablespoons Chickpea flour (besan)

3 cups Water

2 teaspoons Ghee or vegetable oil

½ teaspoon Cumin seeds

½ teaspoon Mustard seeds

1 Dry red chili

6 leaves Curry leaves

pinch Asafoetida (hing)

1 inch piece Cinnamon stick

¼ teaspoon Turmeric powder

½ teaspoon Ginger paste

3 Green chilies, finely chopped

3 teaspoons Sugar

Salt to taste

4 sprigs Fresh cilantro, for garnish

Directions

  1. In a large mixing bowl, whisk together the sour yogurt, chickpea flour, water, turmeric powder, ginger paste, chopped green chilies, sugar, and salt. Use a wire whisk or hand blender to ensure the batter is completely smooth with no lumps. Set aside.

  2. Place the yogurt-flour mixture in a heavy-bottomed pan over medium heat. Stir continuously with a spoon to prevent the yogurt from curdling and separating. Bring the mixture to a boil, stirring frequently, then immediately reduce the heat to low and maintain a gentle simmer.

  3. While the kadhi simmers, heat the ghee or oil in a separate small pan over medium-high heat. Once hot, add the cumin seeds, mustard seeds, dry red chili, and asafoetida. Fry for 30 seconds to 1 minute until the spices are fragrant and the mustard seeds begin to crackle.

  4. Add the curry leaves and cinnamon stick to the hot oil and allow to cook for another 10 seconds until aromatic. Immediately pour this entire tempering mixture, including all the spices and oil, into the simmering kadhi.

  5. Stir the kadhi well to combine the tempering throughout, then let it continue to simmer gently for 5 minutes on low heat, stirring occasionally. The sauce should be smooth and slightly thick.

  6. Remove from heat and stir in the fresh cilantro. Taste and adjust seasoning with salt if needed. Transfer to a serving bowl and serve warm alongside steamed rice or with Indian bread.
