Ingredients

1 lb ground beef

1 lb ground chorizo sausage, casings removed if necessary

Salt and pepper to taste

3 large California avocados

2 tbsp fresh lime juice

1 chipotle chili pepper in adobo sauce

3 tbsp chopped fresh cilantro

1/3 cup finely diced purple onion

1/2 tsp garlic powder

1/2 cup mayonnaise

1 to 2 tsp milk

8 hamburger buns

Crispy thick-cut bacon slices

Sliced cheddar cheese

Fresh lettuce

Fresh tomato, sliced

Pickled jalapeños

Directions

  1. In a large bowl, combine the ground beef and chorizo sausage. Using your hands, mix until the two meats are evenly combined throughout. Divide the mixture into 8 equal portions and gently form each portion into a burger patty approximately 3/4 inch thick. Season both sides of each patty with salt and pepper. Preheat your grill to medium heat and cook the patties for about 4 to 5 minutes per side until the internal temperature reaches 160°F. If desired, add a slice of cheddar cheese to each patty in the last minute of cooking to allow it to melt.

  2. While the burgers cook, prepare the guacamole. Cut each avocado in half lengthwise and remove the pit. Using a spoon, scoop the flesh into a medium bowl and mash with a fork to your desired consistency, leaving it slightly chunky or smooth depending on your preference.

  3. To the mashed avocado, add the lime juice, diced purple onion, chopped cilantro, and garlic powder. Remove the seeds from the chipotle pepper to reduce heat, or keep them for extra spiciness, then finely mince the pepper and add it to the guacamole. Gently fold all ingredients together until well combined.

  4. Taste the guacamole and adjust the seasonings with additional salt, lime juice, or minced chipotle as needed to suit your preference.

  5. Prepare the chipotle mayo by placing 1/2 cup mayonnaise and 1 chipotle pepper (seeds removed for less heat) in a blender or food processor. Add 1 tsp milk and blend until smooth and creamy. If the consistency is too thick, add up to 1 more tsp milk and blend again until you reach a spreadable consistency.

  6. Cook the bacon until crispy and set aside. Lightly toast the hamburger buns if desired. Spread chipotle mayo on both the top and bottom of each bun. On the bottom bun, layer lettuce, a tomato slice, a dollop of guacamole, the cooked burger patty (with melted cheese if used), 1 or 2 slices of crispy bacon, and pickled jalapeños. Top with the top bun and serve immediately while warm.
