Ingredients

16-ounce can chickpeas, drained and rinsed

1 1/4 cups kimchi, drained

1/4 cup tahini

4 tablespoons fresh lemon juice

1/4 cup water

1 tablespoon Sriracha (optional)

Directions

  1. Add the drained and rinsed chickpeas to a food processor.

  2. Add the drained kimchi to the food processor.

  3. Add the tahini and fresh lemon juice.

  4. Add the water and process until smooth, about 1–2 minutes, scraping down the sides as needed.

  5. Add the Sriracha if desired and pulse until fully incorporated.

  6. Transfer to a serving bowl and serve immediately, or refrigerate until ready to use.
