8 ounces dried udon, ramen, soba, lo mein noodles, or spaghetti
1 large crown broccoli (10 to 12 ounces)
2 cloves garlic, minced
1 (1-inch) piece fresh ginger, minced
1 1/4 cups low-sodium chicken broth, divided
1/4 cup reduced-sodium soy sauce or tamari
2 tablespoons oyster sauce
1 tablespoon honey
1 tablespoon cornstarch
1 tablespoon olive oil
1 pound lean ground beef

Directions
Bring a large pot of salted water to a boil. Add the noodles and cook according to package directions until just tender. Drain and set aside.
While the noodles cook, cut the broccoli into bite-sized florets. Mince the garlic and fresh ginger.
In a small bowl, whisk together 1/4 cup of the chicken broth, soy sauce, oyster sauce, honey, and cornstarch until smooth. Set the sauce mixture aside.
Heat the olive oil in a large skillet or wok over medium-high heat. Add the ground beef, breaking it up with a spoon as it cooks. Cook until the beef is no longer pink and cooked through, about 5 to 7 minutes. Drain excess fat if needed.
Add the minced garlic and ginger to the cooked beef and stir-fry for about 1 minute until fragrant.
Add the broccoli florets and the remaining 1 cup of chicken broth to the skillet. Bring to a simmer, cover, and cook for 4 to 5 minutes until the broccoli is tender-crisp.
Stir the sauce mixture once more to ensure the cornstarch is fully incorporated, then pour it into the skillet with the beef and broccoli. Stir continuously for 1 to 2 minutes until the sauce thickens and coats the vegetables.
Add the cooked noodles to the skillet and season with salt and black pepper. Toss everything together until the noodles are evenly coated with sauce and heated through, about 2 minutes.
Transfer to a serving dish and garnish with sliced scallions and toasted sesame seeds if desired. Serve hot.
