Ingredients
1 tablespoon coconut oil
1 small yellow onion, chopped
1 medium Gala apple, peeled and chopped
1 pound ground chicken
1 teaspoon ground sage
1 teaspoon fennel seeds, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
Directions
Warm the coconut oil in a large skillet over medium heat for about 1 minute.
Add the chopped yellow onion to the skillet and cook for 1 to 2 minutes, stirring occasionally, until the onion becomes translucent and softened.
Stir in the chopped Gala apple and continue cooking for another 2 minutes, allowing the apple to begin to soften.
Transfer the onion and apple mixture to a medium bowl and let it cool for about 5 minutes.
Once cooled, add the ground chicken, ground sage, chopped fennel seeds, salt, black pepper, smoked paprika, and cayenne pepper to the bowl. Mix gently but thoroughly until all seasonings are evenly distributed throughout the mixture.
Divide the chicken mixture into 8 equal portions and shape each portion into a patty about 1/2 inch thick.
Return the skillet to medium heat and cook the sausage patties in batches of 4, cooking for approximately 3 minutes per side, until the internal temperature reaches 165°F and the patties are golden brown on both sides.
Remove the cooked patties from the skillet and serve immediately while warm.
