Ingredients
1 English cucumber, halved and sliced thin
1/4 cup seasoned rice vinegar
1/4 cup mayonnaise
2 tablespoons Sriracha sauce
3 tablespoons soy sauce
2 tablespoons packed brown sugar
4 garlic cloves, minced
1 tablespoon toasted sesame oil
1 1/2 pounds 85 percent lean ground beef
1 head Bibb lettuce (8 ounces), leaves separated
Directions
In a small bowl, combine the sliced cucumber with the seasoned rice vinegar. Toss gently and let sit while you prepare the other components.
In a second small bowl, whisk together the mayonnaise and Sriracha sauce until well blended. Set aside.
In a third small bowl, stir together the soy sauce, brown sugar, minced garlic, and toasted sesame oil. Set aside.
Heat a 12-inch nonstick skillet over high heat. Add the ground beef and cook, breaking it apart as it browns, for 8 to 10 minutes. Continue cooking until all liquid has evaporated and the beef begins to fry in its own fat, creating small crispy bits.
Pour the soy sauce mixture over the cooked beef and stir to combine. Cook for about 2 minutes, stirring frequently, until the sauce has nearly evaporated and coats the beef.
To serve, spoon the sizzling beef mixture onto individual Bibb lettuce leaves. Top each wrap with a spoonful of pickled cucumber and a small dollop of Sriracha mayonnaise. Serve immediately while the beef is warm.
