Ingredients
1/2 cup butter or margarine
3/4 cup brown sugar, firmly packed
1 teaspoon vanilla extract
1/2 teaspoon baking soda
2 cups quick-cooking oats (uncooked)
1 cup raisins
Directions
Preheat your oven to 350°F. Thoroughly wash your hands with soap and warm water. Lightly grease a 9 by 13 inch baking pan and set it aside.
In a large skillet over medium heat, combine the butter and brown sugar. Stir frequently until the butter is completely melted and the sugar begins to dissolve, about 2 to 3 minutes.
Remove the skillet from heat and let cool for 1 minute. Stir in the vanilla extract, baking soda, quick oats, and raisins until everything is well combined and no dry oat bits remain.
Transfer the mixture to the prepared baking pan and spread evenly, pressing gently to form a compact layer.
Bake in the preheated oven for 15 to 20 minutes, until the edges are light golden brown and the center is set but still slightly soft to the touch.
Remove from the oven and allow to cool in the pan at room temperature for at least 30 minutes. Once cooled, cut into 30 squares using a sharp knife, wiping the blade between cuts for clean edges.
