Ingredients

1 small red onion, sliced thinly

1 cup water, divided

2 cups vegetable broth

1 yam, peeled and diced

5 cups kale, chopped

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1/4 teaspoon red pepper flakes

1 teaspoon mild curry powder

1 tablespoon yellow miso paste

1/4 teaspoon cinnamon

Directions

  1. In a medium pot, combine the sliced red onion with 1/4 cup of water. Cook over high heat for about 3 minutes, stirring occasionally, until the onion becomes translucent and softened. Add the vegetable broth, diced yam, and the remaining 3/4 cup water to the pot and stir to combine. Bring the mixture to a boil, then reduce the heat to medium and simmer until the yam pieces are nearly fork-tender, approximately 3 minutes.

  2. Add the chopped kale, chili powder, cumin, garlic powder, red pepper flakes, curry powder, miso paste, and cinnamon to the pot. Stir well to distribute all the spices and miso throughout the broth. Continue cooking over medium heat, stirring frequently, for about 3 more minutes until the kale becomes dark green, tender, and completely softened. Remove the pot from heat and let the soup rest undisturbed for 5 to 10 minutes to allow the spices to meld and deepen the flavors.
