Ingredients

⅔ tablespoon extra virgin olive oil

1½ cups potatoes, cut into 1/3-inch dice

⅛ pinch salt

1 garlic clove, minced (optional)

Directions

  1. Peel the potatoes and cut them into uniform 1/3-inch cubes. Pat dry with paper towels to remove excess moisture.

  2. Heat the olive oil in a skillet over medium-high heat. Once shimmering, add the diced potatoes in a single layer.

  3. Cook the potatoes for 12–15 minutes, stirring occasionally, until they are golden brown and crispy on all sides.

  4. Add the minced garlic (if using) during the last minute of cooking, stirring constantly to avoid burning.

  5. Season with a pinch of salt. Transfer to a paper towel–lined plate to cool and crisp up further.

  6. Serve warm as a topping for soups and salads, or enjoy as a crunchy snack.
