1½ pounds Boneless, skinless chicken thighs

1 cup Cornflake cereal

1 teaspoon Paprika

½ teaspoon Italian herb seasoning

¼ teaspoon Garlic powder

¼ teaspoon Onion powder

Directions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

  2. Pat the chicken thighs dry with paper towels. Cut them into bite-sized nugget pieces, approximately 1½ to 2 inches in length.

  3. Crush the cornflake cereal into fine crumbs and place in a shallow bowl. In another shallow bowl, combine the paprika, Italian herb seasoning, garlic powder, and onion powder.

  4. Mix the spice blend into the crushed cornflakes until evenly distributed.

  5. One piece at a time, roll each chicken nugget in the cornflake mixture, pressing gently so the coating adheres to all sides. Place coated nuggets on the prepared baking sheet in a single layer.

  6. Bake for 18–20 minutes until the nuggets are golden brown and the internal temperature reaches 165°F (74°C) when measured with a meat thermometer inserted into the thickest piece.

  7. Remove from the oven and let cool for 2–3 minutes before serving. Serve warm with your choice of dipping sauce.
