Ingredients
1 can (6.5 ounce) chunk light tuna in water
1 large ripe avocado, diced
1 cup Roma tomatoes, diced
1/4 cup red onion, diced
2 teaspoons fresh lime juice
1 teaspoon crushed red pepper
1/4 teaspoon salt
1/2 large firm mango, diced
Directions
Wash your hands thoroughly with soap and warm water before beginning.
Open the can of tuna and drain the water completely, pressing gently with a fork to remove excess liquid.
Transfer the drained tuna to a large mixing bowl. Add the diced avocado and gently mix with a fork until the avocado is partially broken down and creates a creamy texture throughout the tuna.
Add the diced Roma tomatoes, red onion, lime juice, crushed red pepper, salt, and diced mango to the bowl.
Gently fold all ingredients together until well combined, being careful not to overmix and crush the avocado or mango. Taste and adjust seasoning as desired.
Divide into four equal portions and serve immediately, or refrigerate until ready to serve.
Comments
Every ingredient is a routine stock item at Harris Teeter, Food Lion, or Walmart—no special trip required, and canned tuna keeps the cost under $3 per serving. The stated 15 minutes is honest for chopping and assembly, though meal-prep time could stretch it to 20 if you're hand-dicing. This is a quick weeknight dish that reheats poorly but works beautifully as a same-day lunch or light dinner, and mango adds seasonal brightness if you catch good local supply in summer or early fall.
