Pork Chops With Warm Plum Sauce

Ingredients
4 tablespoons olive oil
6 boneless loin pork chops, about 3/4 inch thick
Kosher salt and black pepper to taste
3 red or black plums, thinly sliced (about 2 cups)
1 tablespoon fresh thyme leaves
6 sprigs fresh thyme for garnish
Directions
Pat the pork chops dry with paper towels. Season both sides generously with kosher salt and black pepper.
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering, about 1 minute.
Working in batches if necessary, carefully place the pork chops in the hot skillet. Sear for 4–5 minutes on the first side without moving them, until golden brown and a meat thermometer inserted at the thickest point reads 145°F (63°C). Flip and sear the second side for another 3–4 minutes until the internal temperature reaches 145°F (63°C). Transfer the cooked chops to a clean plate and tent loosely with foil to keep warm. Repeat with remaining oil and pork chops if cooking in batches.
In the same skillet, add the sliced plums and fresh thyme leaves over medium heat. Stir gently and cook for 3–4 minutes, until the plums soften and begin to release their juices, creating a warm sauce.
Taste and adjust seasoning with additional salt and pepper if needed. Divide the pork chops among six serving plates and spoon the warm plum sauce over each chop. Garnish with a fresh thyme sprig and serve immediately.
