3 garlic naan flatbreads
1 cup pizza sauce
1 cup shredded mozzarella cheese
3 cups fresh spinach, loosely packed
1 cup fresh diced tomatoes
2 tablespoons olive oil, plus additional for drizzling
¼ cup fresh basil leaves, torn
Directions
Preheat your grill to medium-high heat. Remove the chicken sausages from their casings and break them into small crumbled pieces, or leave them whole if you prefer. Grill the sausage pieces, stirring occasionally, until browned and cooked through (internal temperature 165°F), about 8–10 minutes. Transfer to a clean plate.
Brush each naan flatbread lightly with olive oil on one side. Place them oil-side-down on the grill grates and let them warm and lightly char for 1–2 minutes.
Carefully flip the naan breads oil-side-up. Spread approximately 1/3 cup of pizza sauce onto each bread, leaving a small border around the edges.
Layer the grilled chicken sausage evenly over the sauce on each pizza. Distribute the fresh spinach, diced tomatoes, and shredded mozzarella cheese over the top.
Close the grill lid and cook until the cheese is completely melted, the bottom of the crust is golden and crispy, and the spinach has wilted, 15–20 minutes. Watch carefully to avoid burning the crust.
Remove the pizzas from the grill and transfer to a cutting board. Scatter the torn fresh basil over the top of each pizza and drizzle lightly with additional olive oil. Serve immediately.
