Ingredients

3 tablespoons butter

2 pounds ground beef

1 medium onion, sliced

2/3 cup uncooked long-grain rice

1/2 head cabbage, chopped

2 cans (14.5 oz each) diced tomatoes with green chiles

Directions

  1. Heat butter in a large skillet over medium-high heat. Brown the ground beef, breaking it apart as it cooks, until no pink remains. Drain excess fat if needed.

  2. Arrange the uncooked rice evenly over the browned beef.

  3. Layer the sliced onion over the rice.

  4. Spread the chopped cabbage evenly over the onion layer.

  5. Pour both cans of diced tomatoes with green chiles (including liquid) over the cabbage.

  6. Cover the skillet with a tight-fitting lid. Reduce heat to medium-low and simmer for exactly 30 minutes without lifting the lid or stirring—this allows the rice to cook through and the flavors to meld together.

  7. Remove from heat and let stand covered for 2 minutes. Gently fluff the mixture with a fork and serve immediately.
