2 L chocolate ice cream

48 graham crackers

1 jar hot fudge sauce

24 large marshmallows

Directions

  1. Place 24 graham crackers on a work surface or serving platter with the good side facing down. Place the marshmallows in a microwave-safe bowl and heat in the microwave for 1 to 2 minutes, stirring and checking frequently, until they are fully melted and soft.

  2. Spread the melted marshmallows evenly over each of the 24 graham crackers. Gently warm the hot fudge sauce in the microwave or in a small saucepan until it is warm to the touch but not hot—this prevents the ice cream from melting too quickly when it comes in contact with the sauce.

  3. Working quickly, remove the chocolate ice cream from the freezer. Cut or slice the ice cream into 24 portions that are roughly the size of a graham cracker. Place one slice of ice cream on top of the marshmallow layer on each cracker.

  4. Immediately drizzle or spread a small amount of warm fudge sauce over the ice cream on each sandwich, then quickly top each one with a second graham cracker, good side up, pressing gently.

  5. Serve the ice cream sandwiches immediately while the ice cream is still frozen and the marshmallow is soft. Work as quickly as possible or enlist help to assemble—speed is essential to prevent melting.
