Ingredients
¼ pound linguine pasta
½ pound medium shrimp, peeled and deveined
2 medium tomatoes, diced
½ cup cream cheese spread
1½ cups fresh spinach, torn
2 tablespoons tomato-infused oil, divided
Salt to taste
Black pepper to taste
Directions
Bring a large pot of salted water to a boil. Add linguine and cook, stirring occasionally, until al dente according to package directions. Drain and set aside.
While pasta cooks, heat 1 tablespoon of tomato oil in a large heavy skillet over medium-high heat. Season the shrimp generously with salt and black pepper, then add to the hot skillet. Cook, stirring occasionally, until the shrimp turn pink and opaque throughout, approximately 3 minutes. Transfer cooked shrimp to a clean plate.
In the same skillet, add the remaining 1 tablespoon of tomato oil and reduce heat to medium. Add the diced tomatoes and cook for 1 minute, stirring gently. Stir in the cream cheese spread, breaking it up as it melts into the sauce.
Continue cooking and stirring until the cream cheese is completely melted and the sauce is smooth and creamy, about 2 minutes. Season the sauce lightly with salt and black pepper to taste.
Add the torn fresh spinach to the skillet, stirring constantly until the spinach is completely wilted, 1 to 2 minutes.
Return the cooked shrimp to the skillet along with the drained pasta. Toss everything together gently but thoroughly until the pasta is evenly coated with the creamy sauce and all ingredients are combined. Remove from heat, cover the skillet, and let it rest for 2 to 3 minutes.
Give the pasta a final gentle stir to ensure everything is well coated. Divide between serving bowls and serve immediately.
