Ingredients

¼ pound Cooked shredded chicken

1 Celery stalk, chopped

1 Medium apple, chopped

⅓ cup Light mayonnaise

1 Lemon, juiced

1½ ounces Raisins

8 slices Whole wheat bread slices

1 cup Walnuts, chopped (optional)

Directions

  1. Wash your hands thoroughly with soap and warm water before beginning food preparation.

  2. In a large mixing bowl, combine the shredded cooked chicken, chopped celery, chopped apple, light mayonnaise, fresh lemon juice, raisins, and chopped walnuts if using. Stir all ingredients until well mixed and evenly coated with the mayonnaise dressing.

  3. Divide the chicken salad mixture evenly among 4 slices of whole wheat bread, spreading it generously on each slice.

  4. Top each prepared slice with another whole wheat bread slice to form 4 complete sandwiches.

  5. Cut sandwiches diagonally if desired, and serve immediately or wrap for transport.

Every ingredient lands at any Charlotte grocery chain—chicken, celery, apple, mayo, lemon, raisins, whole wheat bread, and walnuts are staples at Harris Teeter, Food Lion, Publix, and Walmart alike. The cost per serving runs around $2.50 to $3.00, driven mainly by the chicken and walnuts; the 15-minute timer is honest for assembly if using rotisserie chicken, though poached or shredded cooked chicken saves effort. This is a light lunch that doesn't reheat well (bread gets soggy), so plan for same-day consumption, but it's forgiving enough for weeknight prep and feeds four without fuss.
