Ingredients
2 tbsp Creamy peanut butter
¾ cup Unsweetened Dutch-process cocoa powder
2 tbsp Granulated sugar
0.05 tsp Salt
3 oz Bittersweet or semisweet chocolate, finely chopped
½ tsp Vanilla extract
1½ cup Water, divided
Directions
In a large saucepan, combine 1 cup of water with the sugar, cocoa powder, and salt. Whisk constantly over medium heat until the mixture comes to a boil. Continue boiling for about 45 seconds while whisking, then remove from heat.
Add the finely chopped chocolate to the hot mixture and let sit for 1 minute, then stir until the chocolate is completely melted and smooth.
Whisk the peanut butter into the chocolate mixture until fully incorporated and no streaks remain.
Stir in the vanilla extract and the remaining 1/2 cup of cold water until the mixture is smooth and well combined.
Transfer the mixture to a blender and blend for about 15 seconds to ensure a uniform texture. Pour into a heat-proof bowl.
Chill the mixture thoroughly in the refrigerator for at least 4 hours until it is very cold.
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until frozen.
Transfer the sorbet to a freezer-safe container and freeze for at least 1 hour to harden before serving. If too hard to scoop, let thaw for 5-10 minutes at room temperature.
Comments
Peanut butter and cocoa powder are staples at every Charlotte chain—no special trips needed. The five-hour stated time is honest for a sorbet that requires freezing, though most of that is passive; active prep is around 15 minutes. Cost per serving runs roughly $1.50–$2.00, mostly driven by decent bittersweet chocolate, which is reasonable for a frozen dessert. This is a make-ahead dish that reheats poorly but is genuinely better when scooped straight from the freezer, so it suits weekend prep or entertaining rather than weeknight spontaneity.
