Ingredients

3 cups Concord grape juice

2½ cups Filtered water

½ cup Light agave nectar

1 tablespoon Meyer lemon zest

⅛ teaspoon Champagne yeast

Directions

  1. Combine the Concord grape juice, filtered water, and light agave nectar in a large glass jar or fermentation vessel. Stir until the agave nectar is fully dissolved.

  2. Add the Meyer lemon zest to the mixture and stir gently to distribute evenly throughout the liquid.

  3. Sprinkle the Champagne yeast directly onto the surface of the mixture. Allow it to sit undisturbed for about 1 minute, then gently stir to incorporate the yeast throughout.

  4. Cover the jar loosely with cheesecloth or a coffee filter secured with a rubber band to allow gas to escape while preventing dust and insects from entering. This breathable cover is essential for proper fermentation.

  5. Place the jar in a cool, dark location (ideally between 60–75°F) and allow it to ferment for 3–7 days. The fermentation time depends on temperature—cooler environments take longer, while warmer ones ferment faster.

  6. Monitor the fermentation by observing bubbles and sampling the taste daily. When the soda reaches your desired level of carbonation and residual sweetness (typically after 3–5 days), it is ready to bottle.

  7. Using a fine-mesh strainer or cheesecloth, carefully filter the fermented soda to remove the lemon zest and any sediment. Pour the liquid into clean glass bottles with tight-fitting caps.

  8. Seal the bottles and refrigerate immediately. The cold slows fermentation and preserves carbonation. Consume within 2–3 weeks for best flavor and safety.
