Ingredients
2/3 cup frozen roasted beet, chopped
2 cups frozen ripe strawberries, chopped
1 tsp fresh turmeric, peeled and grated
1 tsp fresh ginger, peeled and grated
1 cup unsweetened almond milk
1/2 cup fresh orange juice
2 tbsp raw unsalted cashews
1 tbsp hemp seeds
1 tbsp goji berries
1 tbsp unsalted almond butter
1 scoop plant-based protein powder
1/4 cup unsweetened coconut milk
Directions
Prepare the roasted beets: peel and chop fresh beets into 1/2-inch pieces. Wrap the chopped beets in aluminum foil and place on a baking sheet. Roast at 400°F for 45 to 50 minutes until very tender when pierced with a fork. Alternatively, halve the beets, steam them for 15 to 20 minutes until soft, then peel and chop. Once cooked, chill the beets completely, then freeze in an airtight container until needed.
In a high-powered blender, combine the frozen roasted beets, frozen strawberries, fresh grated turmeric, and fresh grated ginger.
Add the unsweetened almond milk, fresh orange juice, and unsweetened coconut milk to the blender.
Add the raw cashews, hemp seeds, goji berries, almond butter, and plant-based protein powder to the blender.
Secure the blender lid and blend on high speed for 60 to 90 seconds, until the mixture is completely smooth and creamy. Pause and scrape down the sides if needed to ensure all ingredients are fully incorporated.
Pour the smoothie into a tall glass and serve immediately. If desired, top with additional hemp seeds, goji berries, or fresh fruit before serving.
