Ingredients
1 tablespoon sweet chilli sauce
1 teaspoon soy sauce
1 Zest of 1 lime
1 teaspoon fresh lime juice
145g bag of spinach, watercress, and rocket salad mix
Directions
In a small bowl, whisk together the sweet chilli sauce, soy sauce, lime zest, and fresh lime juice until well combined. Set the dressing aside.
Place the mixed greens (spinach, watercress, and rocket) in a large mixing bowl.
Drizzle the prepared dressing over the greens and toss gently but thoroughly until all the leaves are evenly coated.
Divide between two serving plates and serve immediately while the greens are crisp and fresh.
Comments
Every ingredient is stocked at any Charlotte grocer—sweet chilli sauce and soy sauce at every chain, limes year-round at Harris Teeter and Publix, mixed greens everywhere. The cost per serving is trivial, under two dollars total with most of the expense in greens you'd buy anyway. The five-minute time is honest for a simple vinaigrette and toss, no hidden prep. This is light, reheats poorly (salad wilts), and works as a weeknight side or starter rather than a meal, but for what it is—a quick, cheap, no-fuss vegetable dish—it delivers.
