Ingredients

2 onions, diced

2 green bell peppers, diced

3 tablespoons paprika

6 boneless, skinless chicken pieces (about 2 pounds)

1/4 cup sour cream

Salt and black pepper to taste

1 tablespoon olive oil

1/4 cup dry white wine

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt and pepper on both sides.

  2. Add the chicken to the hot skillet and sear for 4-5 minutes per side until golden brown. Transfer the cooked chicken to a plate.

  3. In the same skillet, add the diced onions and green peppers. Sauté for 5 minutes, stirring occasionally, until the vegetables begin to soften.

  4. Sprinkle the paprika over the vegetables and stir constantly for 1 minute to bloom the spice and release its flavor.

  5. Pour in the white wine, scraping up any browned bits from the bottom of the skillet. Allow the wine to reduce slightly for 2 minutes.

  6. Return the chicken pieces to the skillet, nestling them among the vegetables. Reduce the heat to medium-low, cover, and simmer for 15-20 minutes until the chicken reaches an internal temperature of 165°F.

  7. Remove from heat and stir in the sour cream until fully incorporated and the sauce is smooth. Taste and adjust seasoning with additional salt and pepper as needed.

  8. Serve hot, spooning the paprika sauce with vegetables over the chicken pieces.
