Ingredients
4 skinless, boneless chicken breast fillets
1 tablespoon paprika
1 teaspoon dried onion flakes
¼ teaspoon cayenne pepper
2 teaspoons dried thyme
Salt and black pepper to taste
1 tablespoon sunflower oil
200g guacamole, for serving
Directions
Pat the chicken breasts dry with paper towels. Score the smooth side of each breast with shallow diagonal cuts to help the spice mixture adhere.
Combine the paprika, onion flakes, cayenne pepper, dried thyme, salt, and black pepper in a small bowl or on a plate, mixing well.
Brush both sides of each chicken breast evenly with the sunflower oil.
Coat all surfaces of the chicken with the spice mixture, pressing gently so it adheres well.
Heat a grill, griddle pan, or barbecue to medium-high heat.
Place the chicken on the hot grill and cook for 5–6 minutes on each side, until golden and cooked through. The internal temperature should reach 165°F (74°C) when measured with a meat thermometer in the thickest part.
Transfer the chicken to a serving plate and top each breast with a generous dollop of guacamole. Serve immediately.
Comments
Every ingredient lives at any Charlotte grocery chain, and the dish costs under $3 per serving with chicken as the only major expense. The 22-minute claim glosses over chicken-cook time: pan-seared chicken breasts need 6–8 minutes per side, plus resting, so budget 35 minutes total. It's a solid weeknight winner that reheats cleanly and suits a family dinner, though the guacamole topping signals this is best eaten fresh the same night.
