1 medium yellow onion, diced
2 stalks celery, chopped
2 bell peppers (any color), chopped
8 ounces fresh mushrooms, sliced or chopped
3 pounds Cajun-style smoked sausage links, cut into 1-inch pieces
4 cans (15 ounces each) dark red kidney beans, drained and rinsed
32 ounces beef broth
2 cloves fresh garlic, minced, or 1 teaspoon minced garlic
2 teaspoons Italian seasoning
4 cups uncooked white or brown rice
Directions
Drain and rinse the kidney beans in a colander, then transfer them to your crock pot. Dice the onion into small pieces. Chop the celery stalks into bite-sized pieces. Chop the bell peppers into 1-inch pieces. Slice or chop the fresh mushrooms. Cut the Cajun sausage links into 1-inch pieces.
Add all the chopped vegetables (onion, celery, bell peppers, and mushrooms) and the sausage pieces to the crock pot with the beans. Pour the entire 32 ounces of beef broth over the mixture.
Stir the mixture well to combine. Add the minced garlic and Italian seasoning to taste, then stir again until everything is evenly distributed.
Cover the crock pot and cook on high heat for 3 hours or on low heat for 5 hours, stirring occasionally (about every 45 minutes) to prevent sticking and ensure even cooking.
While the crock pot is cooking, prepare the rice according to package directions in a separate pot. Once the rice is done and the Cajun mixture is tender and flavorful, divide the cooked rice among serving bowls and ladle the sausage and bean mixture over top.
