1/3 cup melted butter

2/3 cup white sugar

1 cup corn syrup

2 tablespoons bourbon whiskey

3 eggs

1/2 teaspoon salt

1 cup coarsely chopped pecans

1 cup semi-sweet chocolate chips

1 (9 inch) refrigerated pie crust

Directions

  1. Preheat your oven to 375°F (190°C).

  2. In a large mixing bowl, combine the white sugar, corn syrup, bourbon whiskey, melted butter, and salt. Whisk these ingredients together until the mixture is smooth and well blended.

  3. Add the eggs to the mixture and continue whisking until the filling is creamy and fully incorporated. This will be baked to an internal temperature of 160°F.

  4. Gently fold the coarsely chopped pecans and semi-sweet chocolate chips into the filling using a spatula, being careful not to overmix.

  5. Place the refrigerated pie crust in a 9-inch pie pan. Pour the chocolate-pecan filling into the crust, spreading it evenly.

  6. If desired, cover the exposed edges of the pie crust with strips of aluminum foil to prevent them from browning too quickly during baking.

  7. Bake for 45 to 50 minutes, until the filling is set and the top is golden brown. The center should reach 160°F when measured with a food thermometer.
