Ingredients
1 5-ounce can albacore tuna packed in water, drained
1/4 cup plain Greek yogurt
1 tablespoon seasoned rice wine vinegar
1/2 teaspoon Dijon mustard
1 teaspoon whole grain mustard
1-2 tablespoons capers, finely chopped
1 green onion, trimmed and chopped
1/2 teaspoon fresh dill
1/4 teaspoon garlic salt
kosher salt and freshly ground black pepper to taste
1/4 cup extra virgin olive oil
1/2 teaspoon honey, or to taste
2-3 cups fresh green leafy lettuce or spinach
1/2 avocado, peeled and cut into chunks
4-5 fresh strawberries, hulled and sliced
1-2 tablespoons smoked almonds, coarsely chopped
fresh mint leaves for garnish
Directions
Drain the tuna thoroughly and transfer to a small mixing bowl. Add the Greek yogurt, Dijon mustard, whole grain mustard, capers, green onion, and dill. Stir until well combined. Season with garlic salt, kosher salt, and black pepper to taste. Set aside.
In a separate small bowl or jar, whisk together the extra virgin olive oil, rice wine vinegar, and honey. Taste and adjust seasoning with additional salt, pepper, or honey as desired.
Layer the fresh lettuce or spinach in a serving bowl or on a plate as the base of your salad.
Arrange the tuna salad mixture on top of the greens. Add the sliced strawberries and avocado chunks around the tuna.
Drizzle the mustard vinaigrette evenly over the salad. Sprinkle the chopped smoked almonds on top.
Finish with fresh mint leaves and a final seasoning of kosher salt and black pepper to taste. Serve immediately.
Comments
The ingredients are all easy finds at Charlotte chains, though rice wine vinegar and capers might require a quick check at Harris Teeter if your Food Lion or Walmart doesn't stock them—not a dealbreaker for most weeks. At roughly $4–$5 per serving (tuna, avocado, and smoked almonds drive the cost), this lands as a premium lunch rather than a budget option, and the 15-minute stated time is honest. The real fit question is scale: this serves one person, making it a solo-lunch dish rather than a family meal or one that builds leftovers, so batch-cooking isn't an option. The flavor profile—bright, sweet-savory with strawberry and mint—is fresh and works well for warm weather, but the combination reads more as a restaurant special than a weeknight regular.
