Ingredients

3 medium fresh mango, peeled and diced

¼ medium fresh pineapple, peeled and diced

½ red bell pepper, diced

½ green bell pepper, diced

1 jalapeño pepper, minced

½ medium red onion, diced

5 sprigs fresh cilantro, chopped

to taste fresh lemon juice

to taste garlic salt

to taste ground cumin

to taste red pepper flakes

to taste sea salt

Directions

  1. Carefully peel and dice the mangoes into ½-inch cubes. Trim and peel the pineapple, removing the core, and dice into similar-sized cubes. Place both fruits into a medium mixing bowl.

  2. Dice the red and green bell peppers into small, uniform pieces. Mince the jalapeño pepper finely, removing seeds if you prefer less heat. Dice the red onion into small pieces and chop the fresh cilantro. Add all vegetables to the bowl with the fruit.

  3. Squeeze fresh lemon juice over the mixture and add garlic salt, cumin, red pepper flakes, and sea salt to taste. Stir gently but thoroughly to combine all ingredients and distribute the seasonings evenly.

  4. Cover the salsa and refrigerate for 2 to 3 hours, allowing the flavors to meld and intensify. Give it a gentle stir before serving. Serve chilled with tortilla chips or as a topping for grilled fish or poultry.
