Ingredients
4 ounces Thinly sliced prosciutto or air-cured ham, cut into 1-inch-wide strips
4 ounces Feta cheese, cut into 1-inch-by-1/4-inch-by-1/4-inch pieces
20 leaves Fresh sage leaves, halved lengthwise
⅓ cup Extra virgin olive oil
Freshly ground black pepper
Directions
Lay out a strip of prosciutto on a clean work surface.
Place one feta cheese cube at one end of the ham strip.
Lay half a sage leaf across the feta cube so the leaf tip extends beyond the edge of the ham.
Tightly roll the ham strip around the feta and sage, creating a compact bundle.
Stand the roll upright on its seam end in a shallow bowl or dish so the exposed feta and sage leaf are visible at the top.
Repeat the wrapping process with the remaining ham strips, feta pieces, and sage leaves, arranging each roll upright and close together in the dish to prevent unrolling.
Pour the olive oil over all of the feta and prosciutto rolls, ensuring they are well coated.
Let the rolls marinate at room temperature for 1 hour, allowing the flavors to meld and develop.
Just before serving, sprinkle freshly ground black pepper over the rolls.
Serve the rolls warm or at room temperature, securing each with a toothpick if desired for easy handling.
