Soft, pillowy Indian flatbread with a slight charred exterior, made from a simple dough of flour, yogurt, and yeast. Each piece is grilled until golden and brushed with melted butter for a warm, tender finish perfect for dipping or pairing with curries.

Ingredients
22 ounces bread flour
2 teaspoons instant yeast
2½ teaspoons kosher salt
2 tablespoons sugar
1¾ cups full-fat yogurt
4 ounces unsalted butter, melted
Directions
Combine bread flour, instant yeast, kosher salt, and sugar in a large mixing bowl.
Add the yogurt to the dry ingredients and stir until a shaggy dough forms.
Knead the dough on a floured surface for 8–10 minutes until it becomes smooth and elastic.
Place the dough in an oiled bowl, cover with a damp cloth, and let it rise at room temperature for 4–6 hours, or until it doubles in size.
Divide the dough into 12 equal portions and shape each into a ball. Cover and let rest for 10 minutes.
Flatten each ball into a thin oval or round, about ¼ inch thick.
Preheat a grill or grill pan to medium-high heat.
Grill each naan for 1–2 minutes on the first side until light golden and charred spots appear.
Flip and grill the other side for another 1–2 minutes until puffed and golden.
Remove from grill and immediately brush both sides with melted butter.
Serve warm.
