Mozzarella Chicken with Garlic Spinach

Ingredients
8 boneless, skinless chicken breast halves
1/2 cup Italian seasoned breadcrumbs
8 ounces shredded part-skim mozzarella cheese
1 tablespoon canola oil
4 cloves garlic, minced
2 packages (10 ounces each) fresh spinach leaves
Directions
Wash your hands thoroughly with soap and water. Preheat your oven to 400°F (200°C).
Place each chicken breast between two sheets of plastic wrap. Using a meat mallet, pound each breast until flattened to approximately 1/4 inch thickness.
Spread the Italian seasoned breadcrumbs on a shallow plate. Coat both sides of each flattened chicken breast evenly with the breadcrumbs, pressing gently so they adhere.
Arrange the breaded chicken breasts on a baking sheet lined with aluminum foil in a single layer.
Bake the chicken in the preheated oven for 10 minutes.
Remove the chicken from the oven and evenly distribute the shredded mozzarella cheese over each chicken breast. Return to the oven and bake for 4 to 5 minutes until the cheese is fully melted and the chicken reaches an internal temperature of 165°F (74°C) when measured with a meat thermometer in the thickest part.
While the cheese is baking, heat the canola oil in a large skillet over medium heat.
Add the minced garlic to the hot oil and stir constantly for about 1 minute until fragrant, being careful not to brown it.
Add half of the fresh spinach to the skillet and cook, stirring occasionally, for about 1 minute until it begins to wilt.
Add the remaining spinach to the skillet and continue cooking, turning and stirring occasionally, for 2 to 3 minutes until all the spinach is fully wilted and tender.
Divide the garlic spinach evenly among serving plates and top each portion with a mozzarella-topped chicken breast. Serve immediately while hot.
