2 shots, optional Lemon vodka or favorite vodka

2 shots, optional Watermelon schnapps

4 cups Diced and deseeded watermelon, frozen

  1. Freeze the diced watermelon for at least 1 hour before blending.

  2. Add the frozen watermelon, lemon juice, liquid sweetener to taste, and vodka and watermelon schnapps if desired to a blender or food processor.

  3. Blend on high speed until the mixture reaches a smooth, slushy consistency, about 1 minute.

  4. Divide the slushy between two glasses and serve immediately.

  5. To store extra slushy mixture, place it in freezer-safe glasses and store in a large ziplock bag in the freezer for up to 1 month. Thaw for about 45 minutes before stirring and serving.

This is an adult cocktail that comes together fast once watermelon is cut—the actual mixing takes five minutes, so budget 10-15 minutes total, not the stated 60. Watermelon and lemon are both available year-round at any Charlotte chain, and cost under $1 per drink when using basic vodka and schnapps from Food Lion or Walmart. The only real consideration is that watermelons vary wildly in sweetness (summer peak versus January import), which will shift how much added sweetener you need. This does not keep; drink immediately while frozen, so it's a same-night, occasion-specific recipe rather than a weeknight staple.
