Ingredients

1 tablespoon almond oil

1/4 cup milk or buttermilk

1/8 teaspoon black pepper

9 ounces potatoes, peeled and cubed

1/4 teaspoon salt

5 ounces fresh spinach leaves, large leaves preferred

Directions

  1. Bring a large pot of salted water to a boil over high heat. Working in batches if needed, carefully add the spinach leaves to the boiling water and blanch for approximately 30 seconds until they become vibrant and tender.

  2. Using a slotted spoon, immediately transfer the blanched spinach to a bowl filled with ice water to halt the cooking process. Let sit for 1-2 minutes until completely cooled.

  3. Gently spread the cooled spinach leaves on a clean kitchen towel or plate. Pat them dry thoroughly with paper towels to remove excess moisture. Set the dried spinach aside.

  4. Return the pot of salted water to a boil. Add the cubed potatoes and cook for approximately 20 minutes, or until they are very tender when pierced with a fork.

  5. Drain the cooked potatoes thoroughly and transfer them to a mixing bowl. Mash the potatoes until smooth or to your desired consistency.

  6. Add the almond oil, milk or buttermilk, salt, and black pepper to the mashed potatoes. Stir until all ingredients are well combined and the mixture is creamy.

  7. To serve, lay out a blanched spinach leaf on a plate. Spoon a portion of the mashed potato mixture onto the center of the spinach leaf. Fold or wrap the spinach leaf around the potatoes, or simply arrange the spinach and potatoes together on the plate for an elegant presentation.
