2 Ripe bananas, mashed

2 tablespoons Water

½ teaspoon Baking powder

½ teaspoon Baking soda

¼ teaspoon Salt

¼ cup Fresh or frozen blueberries or strawberries

Directions

  1. Preheat your oven to 350°F. Lightly coat a 12-cup muffin pan with nonstick cooking spray.

  2. In a medium bowl, whisk together the applesauce, sugar, egg, mashed bananas, and water until well combined.

  3. In a large bowl, sift together the all-purpose flour, whole wheat flour, oats, baking powder, baking soda, and salt.

  4. Pour the wet banana mixture into the bowl of dry ingredients and stir until just moistened; do not overmix—small lumps are fine.
