Ingredients

¼ cup sugar

¼ cup coarsely chopped fresh dill

3 ounces green tea kombucha

1½ ounces aquavit or vodka

Crushed ice

Fresh dill sprig for garnish

Directions

  1. In a clean jar, combine the sugar and ¼ cup cold water. Shake vigorously until the sugar completely dissolves.

  2. Stir the coarsely chopped dill into the sugar syrup. Cover the jar and refrigerate for 24–48 hours, allowing the dill flavor to fully infuse into the liquid.

  3. Strain the dill-infused syrup through a fine-mesh sieve, pressing gently on the solids. Discard the spent dill. The resulting syrup can be stored in the refrigerator until ready to use.

  4. Fill a highball glass halfway with crushed ice. Pour in the green tea kombucha, aquavit or vodka, and ½ ounce of the prepared dill syrup.

  5. Stir gently to combine all ingredients. Add more crushed ice, mounding it above the rim of the glass for visual appeal.

  6. Garnish the drink with a fresh dill sprig placed on top. Serve immediately.
