Ingredients
1 pound ground pork (lean but not too lean)
1/2 cup toasted bread crumbs
1/2 cup grated Parmesan cheese
1/4 cup sour cream
1 egg, lightly beaten
1/3 cup fresh parsley, washed, dried and finely chopped
1 teaspoon chili flakes
1 teaspoon fennel seeds
pinch Pinch of kosher salt
1/2 cup vegetable oil for frying
Directions
Place the ground pork in a large mixing bowl. Add the toasted bread crumbs, grated Parmesan, and sour cream. Using your hands, mix these ingredients together until well combined. Add the beaten egg, chopped parsley, chili flakes, fennel seeds, and kosher salt, and continue mixing with your hands until all ingredients are evenly distributed throughout the meat mixture.
Form the meat mixture into approximately 20 meatballs, each about 2 inches in diameter. Roll them gently between your palms to create smooth, compact balls.
Heat the vegetable oil in a large skillet over high heat. Allow the oil to reach a light smoking point, then remove the skillet from heat momentarily to prevent splashing.
Carefully add the meatballs to the hot oil in a single layer, spacing them apart so they brown rather than steam. Return the skillet to high heat and cook, turning the meatballs occasionally to ensure even browning on all sides. Cook until the meatballs reach an internal temperature of 160°F and are golden brown on the exterior, approximately 3 to 5 minutes total. The centers should remain tender when gently pressed.
Transfer the browned meatballs to your prepared tomato sauce. Simmer gently over very low heat for a few minutes to allow the meatballs to absorb the flavors of the sauce. Remove from heat and let the mixture rest for several minutes before serving.
