Ingredients

6 cups cooked quinoa

1 can black beans, rinsed and drained

2 cups frozen corn, thawed

1 cup red bell pepper, diced

5 tablespoons fresh lime juice

1½ tablespoons red wine vinegar

1½ teaspoons ground cumin

¼ cup fresh cilantro, chopped

salt and pepper to taste

Directions

  1. In a small bowl, whisk together the fresh lime juice, red wine vinegar, and ground cumin. Set the dressing aside.

  2. In a large bowl, combine the cooked quinoa, rinsed black beans, thawed corn, and diced red bell pepper. Mix gently until all ingredients are evenly distributed.

  3. Pour the prepared dressing over the quinoa mixture and toss well to ensure all components are lightly coated.

  4. Fold in the chopped cilantro gently, then season the salad to taste with salt and pepper.

  5. Refrigerate for at least 15 minutes to allow flavors to meld. Serve chilled or at room temperature.
