2½ cups All-purpose flour

1 cup Butter, room temperature

¾ cup Brown sugar

¾ cup Granulated sugar

2 Eggs

1 teaspoon Caramel flavored extract

1 teaspoon Baking soda

1 teaspoon Salt

2½ ounces Crispy apple chips

8 ounces Toffee bits

Directions

  1. Preheat your oven to 350°F (175°C). In a large bowl, cream together the room-temperature butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

  2. Beat in the caramel flavored extract, then add the eggs one at a time, mixing well after each addition until the mixture is smooth and well combined.

  3. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, stirring until just combined.

  4. Lightly crush the apple chips while still in the bag to break them into smaller pieces, then fold them into the dough along with the toffee bits until evenly distributed.

  5. Line baking sheets with parchment paper. Using a small cookie scoop or teaspoon, drop rounded tablespoon-sized portions of dough onto the prepared sheets, spacing them about 2 inches apart.

  6. Bake for 8-9 minutes, watching carefully to avoid overbaking or burning. The cookies should be just set at the edges but still slightly soft in the center.

  7. Remove the baking sheets from the oven and allow the cookies to rest on the sheet for approximately 10 minutes to firm up, then transfer them to wire cooling racks to cool completely.
