Ingredients

2/3 cup balsamic vinegar

1 tablespoon brown sugar

2 tablespoons extra virgin olive oil, divided

1 1/2 tablespoons fresh basil, chopped

2 cups fresh peaches, pitted, peeled, and diced

2 teaspoons fresh lemon juice

4 chicken breasts (about 1 pound), pounded or sliced to 1 1/2 inch thickness

4 ounces fresh mozzarella cheese, sliced or torn

Salt and black pepper to taste

Directions

  1. In a small saucepan, combine the balsamic vinegar and brown sugar over medium heat. Bring to a gentle simmer and allow to reduce by half, approximately 10 to 15 minutes, stirring occasionally to prevent scorching. Set aside to cool slightly.

  2. While the vinegar reduction simmers, prepare the peach topping by combining the diced peaches, 1 tablespoon of olive oil, chopped fresh basil, and lemon juice in a bowl. Season with salt and pepper to taste, then set aside.

  3. Pat the chicken breasts dry and season both sides evenly with salt and pepper. Drizzle lightly with the remaining 1 tablespoon of olive oil, coating both sides.

  4. Heat a grill pan or skillet over medium heat until hot. Place the seasoned chicken breasts on the pan and cook for 4 to 5 minutes per side, until the internal temperature reaches 165°F and the exterior is golden. During the final 1 to 2 minutes of cooking, place the mozzarella cheese on top of each chicken breast and allow it to melt.

  5. Transfer the cooked chicken to a serving platter. Top each chicken breast with approximately 1/2 cup of the fresh peach mixture, distributing it evenly.

  6. Drizzle the warm balsamic reduction over each piece and serve immediately while the cheese is still warm.
