1 large hard-boiled egg yolk

2 3/4 teaspoons white-wine vinegar

1 teaspoon Dijon mustard

1/4 teaspoon salt

1/8 teaspoon black pepper

1/4 cup olive oil

16 cups loosely packed mâche (lamb's lettuce)

Directions

  1. Break the hard-boiled egg yolk into a blender. Add the white-wine vinegar, Dijon mustard, salt, and black pepper. Blend on medium speed until the mixture is thoroughly combined and smooth.

  2. With the blender motor still running at low speed, pour the olive oil into the mixture in a slow, steady stream. Continue blending until the vinaigrette is fully emulsified and creamy. Stop the blender once the oil is fully incorporated.

  3. Place the fresh mâche greens in a large salad bowl. Pour the prepared Creole vinaigrette over the mâche and toss gently but thoroughly until all the leaves are lightly coated. Serve immediately.
