2 cups all-purpose flour, divided
1/3 cup cornstarch
1 teaspoon garlic powder

8 (4-ounce) cod fillets
1 cup mayonnaise

Directions
Preheat your deep fryer or large heavy-bottomed pot filled with peanut oil to 375°F.
Bring a large pot of salted water to a boil. Working in small batches, add the cut potatoes and boil for 4 minutes until just tender. Using a slotted spoon, carefully transfer the blanched potatoes to a bowl of ice water to stop the cooking. Drain thoroughly and pat completely dry with paper towels. In a separate serving bowl, combine the mayonnaise, hot pepper relish, minced garlic, hot sauce, and a pinch each of salt and black pepper. Stir until well blended. Cover with plastic wrap and refrigerate for at least 1 hour to allow the flavors to develop before serving alongside the fish and chips.
