8 1/2 ounces frozen berries (such as strawberries, blueberries, raspberries, or mixed berries)

2 tablespoons sugar (or honey, maple syrup, or stevia extract to taste)

1 large egg white

Fresh berries for serving (optional)

Whipped cream for serving (optional)

Directions

  1. In a medium bowl, combine the frozen berries and sugar. Let sit for about 1 minute to begin softening slightly.

  2. In a separate clean bowl, whip the egg white using an electric mixer or whisk by hand until stiff peaks form, about 2-3 minutes.

  3. Working quickly, fold the softened frozen berries and their juices gently into the whipped egg white using a spatula, making 2-3 folds until just combined but still airy.

  4. Divide the mousse among serving glasses or bowls immediately and serve at once, topped with fresh berries and whipped cream if desired.
