Ingredients

2 large egg yolks

½ lemon Juice of 1/2 lemon

1 tsp. Dijon mustard

1 c. light olive oil

3 cloves garlic, minced

1/4 c. freshly chopped parsley

2 tbsp. freshly chopped dill

2 tbsp. freshly chopped chives

2 tsp. kosher salt

1 tsp. onion powder

3/4 tsp. freshly ground black pepper

1 pinch cayenne pepper

1/4 c. unsweetened almond milk

Directions

  1. In a medium bowl, whisk together the egg yolks, lemon juice, and Dijon mustard until well combined.

  2. While whisking constantly, add the olive oil one drop at a time. Once the mixture begins to emulsify and thicken, slowly stream in the remaining oil while continuing to whisk until fully incorporated.

  3. Fold in the minced garlic, parsley, dill, and chives until evenly distributed.

  4. Season the dressing with kosher salt, onion powder, black pepper, and a pinch of cayenne pepper. Stir to combine.

  5. Add the almond milk and stir until smooth. If the dressing is too thick, add additional almond milk one tablespoon at a time until you reach the desired consistency.
