Ingredients

400g fresh green beans, trimmed

Salt for blanching water

25g unsalted butter

3 medium shallots, finely chopped

Freshly ground black pepper to taste

Directions

  1. Bring a large pot of salted water to a boil. Add the trimmed green beans and cook for 3–4 minutes until tender but still crisp. Drain the beans in a colander and immediately transfer them to a bowl of ice-cold water to stop the cooking. Allow them to cool completely, then drain well. (The beans can be prepared up to one day ahead; store them covered in the refrigerator.)

  2. When ready to serve, melt the butter in a large frying pan over medium heat until it foams. Add the chopped shallots and cook gently for 4–5 minutes, stirring occasionally, until they are soft and translucent but not browned.

  3. Add the blanched green beans to the pan with the shallots and toss gently to coat everything in the butter. Cook for 1–2 minutes, stirring occasionally, until the beans are heated through.

  4. Season to taste with salt and freshly ground black pepper. Transfer to a serving dish and serve immediately.
