Ingredients

400 g Greek yoghurt

50 g Unsalted pistachios, ground or finely chopped

5 tbsp Honey

Directions

  1. In a medium bowl, combine the Greek yoghurt and honey. Stir gently until the honey is fully incorporated and the mixture is smooth and creamy.

  2. Reserve about 2 tablespoons of the ground pistachios for topping. Fold the remaining pistachios into the yoghurt mixture, stirring until evenly distributed.

  3. Divide the mixture into serving containers or a freezer-safe dish. Smooth the surface with the back of a spoon.

  4. Freeze for at least 4 hours, or until the mixture reaches a soft-serve consistency. For a firmer texture, freeze overnight.

  5. Before serving, let the ice cream sit at room temperature for 2–3 minutes to soften slightly. Top with the reserved ground pistachios and serve immediately.

Greek yogurt and honey are staples at any Charlotte supermarket, but raw pistachios in shell or shelled roasted pistachios cost $12–16 per pound, making this a $6–8 ingredient investment for two servings. The stated 240 minutes hides what is actually 15 minutes of active work plus a full overnight freeze, which is honest for ice cream but means real planning ahead. This is a fussy, single-night dessert that does not reheat or keep well once scooped, and it suits someone with advance notice rather than a weeknight craving. All three ingredients are available at Harris Teeter, Food Lion, Publix, and Walmart without a second stop.
